This delicious, healthy, easy jam is a great way to use your ripe berries without having them go to waste.
Enjoy.
INGREDIENTS
METHOD
Add the chopped strawberries, maple syrup and lemon juice to a medium size saucepan and heat on medium-low, stirring often.
Bring to a simmer for about 5-7 minutes until the berries are very soft and the mixture is quite watery.
Mash the strawberries well with a potato masher leaving some texture.
Turn the heat off and stir in the chia seeds until well combined with the strawberry mixture. Let sit for 5 minutes.
Transfer to a heat proof bowl or glass jar with a lid and keep it in the fridge. It will be ready to enjoy in about 45 minutes.
Keep your jam in the fridge in an airtight container for up to 2 weeks or freeze it for up to 1 month. (I doubt it will last that long 😉
TIPS & NUTRITION
Unlike store bought jam that’s full of white sugar and very little nutrition, this one’s sweetened with only a tablespoon of maple syrup, full of healthy fats and plant based protein from the chia seeds and takes 15 quick minutes to make. No “preserving” necessary!
You can use any berries you have on hand. It’s a great way to use them up if they’re getting a bit too ripe.
