Avocado toast – the trendy brunch option that’s become a staple plant based breakfast or lunch in many of our own kitchens.

Choose a nice ripe avocado so it’s easy to mash or slice on your toast. If your avocados are too hard you can put them in a paper bag with a banana to ripen them up quickly. If you have too many ripe avocados to eat, put the in the fridge – they will keep for another 3 or 4 days without going too soft.
Once you slice the avocado in half, store the half with the pit still inside it in an airtight container in the fridge. This will help keep it from oxidizing (going brown).
