Is there a better season than peach season? They’re delicious in your morning smoothie, with your favourite plant-based ice cream on a hot summer night or in this fresh salad. I even put a peach in the dressing – it’s so good.

Peach Vinaigrette
METHOD
Add all the salad ingredients to a large serving bowl.
Add all the Peach Vinaigrette ingredients to a high speed blender or food processor and blend until creamy.
Toss the salad with the vinaigrette and serve immediately.
TIPS & NUTRITION
You can add any other fruit or veg you like or have on hand to the salad – blueberries are a delicious addition.
Add more protein and make it a meal by adding beans, lentils, quinoa, hemp seeds or pumpkin seeds.
You can assemble the salad and make the vinaigrette ahead of time and keep them separately in the fridge until ready to serve. The vinaigrette will keep in the fridge for up to 3 days.
