These beautiful, light cucumber rolls make a great snack or appetizer, perfect for dinner party or summer bbq.

INGREDIENTS
makes about 8 rolls
METHOD
Lay a large piece of parchment paper on your counter (the same height as the cucumber).
Use a sharp peeler to begin slicing the cucumber lengthwise to make long ribbons.
Choose your 8 best (these will be from the middle of the cucumber) and lay them out on the parchment paper.
Spread the hummus evenly on each slice. Make sure to get the hummus to the very ends so they roll up well. Sprinkle the hemp and sunflower seeds on top of the hummus on each slice and top with a little sea salt and pepper.
Roll up each slice slowly and place them standing up on a plate. Once you have them all rolled and standing, sprinkle the tops with paprika.
TIPS & NUTRITION
You may want to have an extra cucumber on hand as some slices may break or be too thin or small for the rolls.
You won’t use all of the cucumber – the best slices will be the ones in the middle. You can use the thinner slices or broken pieces to make a cucumber ribbon salad – top with a little lemon juice, olive oil and salt and pepper. You can also chop up the remaining cucumber for salad or snacks.
Choose any flavour of hummus you like and switch out the seeds to ones you prefer or have on hand. The options are endless.
