This baked apple pie oatmeal is great for feeding the whole family on a weekend morning or to meal prep so you have a healthy, plant based breakfast ready for busy weekday mornings. Cut it up into individual size pieces and store them in the fridge so you can grab and go anytime.
I love it served with a dollop of coconut yogurt and a sprinkle of hemp seeds.

METHOD
Preheat the oven to 350ºF. Grease a 8″x8″ baking pan with a dash of olive or coconut oil.
Add all ingredients except the walnuts to a mixing bowl and stir until thoroughly combined.
Transfer to a baking pan, top with walnuts and bake for about 45 minutes or until a toothpick comes out clean. Sprinkle with fresh cinnamon before serving.
TIPS & NUTRITION
Sub or add in any nuts or seeds you like or have on hand. Pumpkin seeds are also nice sprinkled on top.
Keep in an airtight container for up to 4 days or freeze in individual portions for longer.
