METHOD
In a large soup pot, sauté the chopped onion and garlic powder in olive oil on medium low heat until the onion is tender. Sprinkle with plenty of fresh ground sea salt and pepper and add in the garlic clove, dried rosemary and sweet potato. Stir well and cook for 5 minutes to bring out the garlic and rosemary flavour.
Add the vegetable broth, apple cider vinegar, water, the bay leaf and the beans. Bring to a boil and then let simmer for 30 minutes. Add in the kale and cook for an additional 10 minutes. Remove the bay leaf before serving.
TIPS & NUTRITION
Feel free to sub in or add any greens you like – spinach, chard or even bok choy. You can also add in any other veggies you like.
