This beautiful bright cookbook puts plants first and uses vegetables in new, fresh, incredibly delicious ways. Not all recipes are fully plant based – a few have egg or dairy – but the majority are and there are options for those that aren’t. I can’t wait to try the Mushroom & White Bean Pot Pie and I love the giant grid of salad dressings.
THE KOREAN VEGAN by Joanne Lee Molinaro
This beautiful cookbook is filled with unique and savoury plant based Korean recipes and inspirational stories of Joanne’s family and culture. It’s unlike your typical ‘vegan cookbook’ and will inspire you to think and cook outside the box, resulting in mouthwatering meals. I’m in love with the Kale and Ramen Salad and the Chocolate Sweet Potato Cake.
THE BUDDHIST CHEF by Jean-Philippe Cyr
This feel good cookbook is filled with approachable, delicious, nourishing recipes. Inspired by cuisines from all around the world, the dishes offer something for everyone. The Pad Thai is incredible and I love the Avocado Tartare.
