This super easy appetizer pairs well with fresh cut veggies, crackers, pita or even crostini. Or enjoy it in a wrap with falafels.
Spread the hummus on a shallow serving tray or plate.
In a small bowl combine the cucumber, tomato, peppers, olives, onion, oregano, salt and pepper. Spoon the vegetable mixture evenly over the hummus and top with pumpkin seeds.
Option to drizzle the dip with a little extra olive oil or balsamic glaze. Serve immediately.
