METHOD
In a large bowl, combine cabbages, carrots, apple, onion and parsley.
In a separate bowl or jar with a lid, combine oil, vinegar, yogurt, maple syrup, mustard, salt and pepper. Whisk to blend or put the lid on the jar and shake to combine.
Drizzle the dressing over the slaw ingredients and toss to combine. Sprinkle with pumpkin seeds, walnuts and serve.
It will keep well in the fridge for up to 2 days.
